Today was tamale making day. I got up at 7:30am to get Jessi to basketball and instead of cooking, I got caught in the basement folding laundry. After reading Jim's blog post on laundry, I felt compelled to help! I have tried almost everything to get the girls to do more with their laundry. Today I told them I would not let them open any gifts until they put their clothes away after I spent 2 hours this morning folding them all!
This year I decided to do two separate batches of tamales, one pot full of meaty ones and later a second pot full of vegi and sweet ones. In the past I would make a small batch of bean and cheese tamales for Monika separated with foil. She would run out before every one else, so this year I felt she deserved not only a full batch, but one steamed in pure water without beef fat dripped in. This year I used Christmas ribbon to label my tamales; red=sweet, white=vegetarian, green=turkey, without=beef. I made 6 dozen altogether! I set aside an assortment for an art department dinner next week and an assortment for gifts. After Monika and Jim both ate their fill, I'm pretty sure I'll run out before New Years!
(See my recipe post from 2008) New this year- I added creamed corn to the vegetarian recipe.
