I had what may have been a perfect Saturday. I slept in until 7am, I got a great 4 mile walk in with Balt. I got into the studio for a couple hours working with yearbook kids and prepping screens. I did some Christmas shopping. I made gluten free banana muffins that were amazing. I went to a Bikram Hot Yoga class that I almost passed out in and then I went out to dinner with a good friend enjoying some really great company.
Here's my recipe--
2/3 c Oat flour
1/3 c Oats
2/3 c Almond flour
2/3 c White Rice flour
1/3 c Brown Rice flour
2T Corn flour
1/2 t salt
1/2 t Baking Powder
1 1/2 t Baking Soda
1T Chia Seeds
2T Vanilla
2 eggs
3/4 c Butter
3 c mashed Banana
1/2 c Raw Sugar
1 c Brown Suagar
1/2 c chopped pecans
350 f preheated
Mix and bake for 40 min.
